Our Culinary Gold Standards

  • We always serve fresh, cage-free shell eggs.
  • Our pizza dough is freshly made from scratch.
  • All entrée meats are roasted right in our kitchens.
  • We only use USDA inspected, all natural, never frozen, ground beef.
  • We only use rBST-free fluid milk from small, regional dairies that support local family farms.
  • We use real, fresh from the farm, potatoes.
  • We only use real cheese.
  • All of our chicken and fish are hand-breaded by our chefs.
  • We only use trans fat-free cooking oils.
  • Our soups and sauces are made from scratch, using real and fresh ingredients to make stock.
  • Our prepared deli salads, from coleslaw to quinoa, are made in our kitchens from scratch.
  • All deli meats are sliced in our kitchens daily.

We want our guests to feel confident that their special dietary needs are met with easy access to nutritional information. Our dietitians play a significant role in ensuring our menu items comply with the Academy of Nutrition and Dietetics, the world’s largest organization of food and nutrition professionals, and are committed to improving the nation’s health.

Whether you’ve made a lifestyle choice or have specific dietary needs, it shouldn’t stop you from enjoying our food. We offer a variety of food options for special diets, including guests with food allergies. Our allergy program provides accurate labeling of food products, prepared by a culinary team that is knowledgeable about food allergies and sensitivities.





Our Sourcing Philosophy

We are passionate about food. We believe that the decisions we make regarding where our food comes from, how it’s sourced and how it’s prepared have a direct impact on the health of our communities, environment, and guests. Because of this, our “Know Your Source” purchasing philosophy is critical to the way we do business. There are two distinct programs that bring this philosophy to life:

FarmSource Partners grow, raise, or catch our produce, dairy, eggs, seafood, and meat. They allow us to serve the freshest and highest quality products to our guests.

Forged Partners are family and independently owned artisan makers. They allow us to introduce our guests to creative, unique, and exciting products.

Within each program, we seek to partner with growers and producers within our operating region who share our passion for food, our commitment to excellence and who foster diversity and inclusion within their company and in their community. And, of course, each must align to our company’s Core Values. Ultimately, we strive to source 20% of our total spend from local partners.
